Veggie Eggs Benedict (sort of) with Dora
About a week ago, I started having the most undeniable craving for poached eggs. For anyone who's familiar with The Diner in Adams Morgan, I have been fondly remembering a brunch special I had there: Chesapeake Eggs Benedict. This consisted of a perfectly toasted English Muffin, topped with a crabcake (and trust me, I'm very sensitive about my crabcakes), a poached egg and hollandaise sauce. Needless to say, it was an incredible brunch that I won't be forgetting anytime soon.

Last night, determined to make me a sandwich of equal deliciousness, we purchased: a loaf of pain aux cereales, some eggs, some tomatos, and some avocados. Dora masterfully prepared the following creation: a thick slice of the pain aux cereales (which was speckled with poppy seeds, and topped with all sorts of other grains), a thick slice of salted and peppered tomato, some avocado slivers, and the poached egg--absolutely delicious! I'm sure I'll be forcing Dora to make this for me more often. Last night we had the idea to add smoked salmon, I'll keep you posted loyal readers. Thank you, Dora!
