Veggie Eggs Benedict (sort of) with Dora

About a week ago, I started having the most undeniable craving for poached eggs. For anyone who's familiar with The Diner in Adams Morgan, I have been fondly remembering a brunch special I had there: Chesapeake Eggs Benedict. This consisted of a perfectly toasted English Muffin, topped with a crabcake (and trust me, I'm very sensitive about my crabcakes), a poached egg and hollandaise sauce. Needless to say, it was an incredible brunch that I won't be forgetting anytime soon.

After lamenting for days and days to Dora about this craving, she told me not to worry and insisted we could make our own delicious egg concotion. In Dora's family eggs benedict is a delicacy prepared by her father reserved only for special occasions, namely Mother's Day and Christmas. After years of watching her father poach eggs, Dora assured me she knew the drill. After consulting Wikipedia, she had the idea to replace the bacon with tomato and avocado.

Last night, determined to make me a sandwich of equal deliciousness, we purchased: a loaf of pain aux cereales, some eggs, some tomatos, and some avocados. Dora masterfully prepared the following creation: a thick slice of the pain aux cereales (which was speckled with poppy seeds, and topped with all sorts of other grains), a thick slice of salted and peppered tomato, some avocado slivers, and the poached egg--absolutely delicious! I'm sure I'll be forcing Dora to make this for me more often. Last night we had the idea to add smoked salmon, I'll keep you posted loyal readers. Thank you, Dora!

Btw, I made Amy Sedaris' cupcakes after another blogger recommended it to me and after reading reviews from other blogs, like yours. I want to say that I agree with you 100%. Her recipe is great! The test that was conducted wasn't done fairly. Obviously, if you're going to overfill the cups, the presentation isn't going to be nice. Who cares how much the recipe states it makes, you have you use your own judgment. I couldn't believe how nicely domed the tops got on her cupcakes. I'm so excited that I've finally found the perfect cupcake recipe. I particularly love the lightness and fluffiness!

Steph, I'm so glad you agree! I haven't made those cupcakes in a while, but they are so perfect when you just want a simple, delicious vanilla cupcake. You're right, they have a GREAT texture. Mmmm, I'm craving one right now!

this is one if my favorite meals and i thought it was my creation. eggs, tomato and avocado seems weird but the taste is sweet and buttery and salty and crunchy. simple and perfect.
